Did I forget it?

I planned on making a repeat batch of pumpkin oats for breakfast today.  I was hustling this morning since D and I had to be at the gym by 8:30 for my weekly gig.  Somehow the pumpkin never made it into my bowl.  Of course I did not even realize it until I was brushing my teeth. I said to myself  - “did I forget to add the pumpkin?”  While consuming said bowl of yumminess I thought it looked a little naked.  That’s why.

So I just added that orange creamy goodness to my lunch salad.  It totally worked well with all the other components and made for a very tasty dish.



Cottage cheese is always a nice addition to a bed of greens – at least in my book.



Along with a dollop of hummus. 

Anyone else adore raw cauliflower?  I would much rather eat it raw then cooked.  I think it is a texture thing.  I love that it is super crunchy.  I do not dig it when it is all mushy.




I doused the entire salad with paprika, cumin and cinnamon.  The spices really give it some life.  Salad dressing can be over powering to the veggies - this blend of spice really just enhances their natural flavor.

Today is flying by.  It is almost time to go retrieve D from school.  Where did my afternoon go?  Oh yeah, I was cleaning and doing laundry – typical mommy duties.  Enjoy the rest of your day.

Where is Libby’s?

Am I the only one who can not find Libby’s canned pumpkin?  I can’t remember the last time I saw it on the self at the grocery store.  I used to be able to purchase it all year round.  I think the last time it was at my local store was during the fall holiday season.  What is up???  Anyone? 

This morning I decided to cheat on my beloved Libby’s with a can of the Whole Foods brand.  It really feels like ages since the last time I consumed pumpkin oats. 




I fixed that this morning.  I added the pumpkin along with a banana and lots of cinnamon to my oatmeal.  It was glorious!!!  Definitely not as good as Libby’s but it will have to do for now.  The 365 brand is not as thick as Libby’s and the pumpkin flavor isn’t as strong.

It was stellar!!  Still in love with my new contraption. 



Now if you will excuse me there is a little boy in need of a wash down.  Must make sure to get behind the ears (you would be surprised by what I have found back there).  Little boys can be so grimy on the outside but so sweet at heart.

7 Years Ago Today


We were doing this. 




Yes, seven years ago, Charlie and I got married.  It was such an amazing day. 




Up until I gave birth to D, it was the most joyous day of my life. 




We had such a blast at our reception.




We even took ballroom dancing classes prior to the wedding so that we did not look like goof balls on the dance floor.  I’m actually not sure that it helped.  We did tear it up though.




Everything about that day was perfect.  I will always look back on our wedding day and smile.




Honestly, I would marry Charlie all over again any day.  He really is a great husband.  I hope that if you decide to get married someday, your day is everything that you imagine it to be.  I know that mine was.

Mommy’s Day

Happy Mother’s Day to those of you who are so lucky to be a mommy.  Seriously, the best thing that ever happened in my life was bringing this fine little dude into my world. 



I do not even have the ability to express with words how much I love this boy.




I could just sit and stare at him all day. 




I find it so amazing that I made him (with a little help from daddy of course).  Seeing him grow up right before my eyes is tough at times.   I miss those itty bitty years.  I will never forget the first time he smiled at me or the first time he laughed (pretty sure we caught that on video).  I will cherish these years that I have with him as a youngster and be thankful for them when is a young man. 




Watching this old guy turn grey tugs at my heart strings – I remember when he was just a little pup.  I love my fur baby like another son.




My little family is very special.  I wouldn’t trade it for anything.

Another thing that is bringing me much happiness – the single cup brewer that I got for Mother’s Day.  This thing ROCKS!!!  I am such a coffee junky and my honey knew how much I wanted one. 




He got me lots of different coffees to go along with it. 




D has been drinking to hot cocoa and thinks it is just the coolest thing – especially since I let him have it with his breakfast.  Chocolate in the AM is a real treat.  I haven’t tried the tea yet but the coffee is really delicious.  The varieties that I have tried are so smooth and have none of that bitterness that sometimes comes out in brewed coffee.

The best part about this thing is that there is practically no clean up.  Now that makes starting my day with a cup of java oh so simple.  Even though the french press won my heart – cleaning it did not. 

Now go show that mommy of yours some love.  Without her you wouldn’t be here.  I’m sending my mom who lives in Maine lots of love from way down here in Massachusetts.  She knows that even thought we are far apart, she is always in my thoughts.
