Oops, I forgot his Cornbread

So you all guessed correct – I made Vegetarian Chili for dinner last night.  I followed the recipe from America’s Test Kitchen Best Light Recipes. Instead of cooking it on the stove, I used the Crock Pot.

I served mine over oatmeal and it was quite delicious. It had a a decent amount of heat without being too overpowering.



I served Charlie’s chili over whole wheat couscous and added a little cheese to the top. Of course he was wishing that he had a big hunk of cornbread to go with it– one of his favorite combos.  Next time I will have to make sure to bake up a healthy cornbread for him.  I am not a cornbread fan so it did not even dawn on me to make some.  Even though he was forced to eat it sans cornbread, he really enjoyed this dinner.




This recipe made enough for him to have it two more times (he took some for lunch today).  That is one of the perks of making a big batch in the Crock Pot. 

This morning I decided to get a few extra Z’s. My body was feeling rather sluggish when I woke up at 4 so I went back to bed.  Usually I have a hard time going back to sleep once I am awake but I did not have any trouble today – that must mean I was really in need of the rest. 

Believe it or not, I did not make oatmeal for breakfast today.  I toasted a Rudi’s Organic Sweet Wheat Bagel and topped it with sunflower seed butter and cranberry apple butter.  On the side I had a chopped apple with cinnamon. 




I really like the size of these bagels.  They are not miniature but not massive ones either. 




I took my little sweet tart to the gym with me for a much later workout than I am used to these days.  It has been a while since I exercised pasted 8 o’clock. He got to hang with his buddies while I got the blood pumping through my body. I did 20 minutes of intervals on the Stair Climber, 20 minutes on the Elliptical, and a 20 minute speed interval run on the Treadmill.  I was wearing my HRM and those intervals really do elevate your heart rate. I also ventured into the free weight area for a bit before heading out.  

I know that they say to eat within 30 minutes of exercising, but I really can not eat while I am still grimy from the gym.  I hoped in the shower before chow time.

Lunch was a small acorn squash, cottage cheese and cinnamon. I roasted the squash in the oven at 450 for about 30 minutes.  I love the way that my house smells when the squash is baking – so aromatic.  




I also had an open faced PB & J.  If I was forced to pick one thing to live off of for the rest of my life, I would pick peanut butter & jelly – my absolute favorite thing to eat. 




I can not believe that it is already almost 1:30.  The time really does fly by when there is a change to my routine.  Oh well, mommy needed her sleep.  I think that an early bed time is in order tonight. I did end up buying New Moon so I would love to dig into that tonight before hitting the hay.  I do not have anything exciting planned for dinner.  Charlie is getting leftover Veggie Burgers. I am going to pass – lentils & beans on back to back days is enough for my system, I don’t want to overdo it.  I might just make oatmeal since I have not had it yet today.  I could not possible go a whole day without my beloved bowl of warm & creamy oats.

This chili looks FABULOUS! I love that you put it over oats- very creative :) Sometimes sleep takes priority- glad you got your rest in.

The chili was tasty so I forgive you for the cornbread oversight. Now don't let it happen again!!

I've never thought to put chili on top of couscous but that sounds really good.

I want to try that cranberry apple butter!
