This morning I packed one of my homemade bars to eat as a snack when we were finished with our babysitting shift at the gym. It was delicious and super crunchy. These things were so easy to make. I mixed cashews, sunflower seeds, pumpkin seeds and honey. Then I pressed the mixture into a parchment lined 8 inch pan. I popped it into a 275 degree oven until it looked golden brown. I really kept my eye on it because I know how quickly nuts & seeds can burn. I let the whole thing cool completely which allows the honey to harden. I then removed the parchment from the pan and cut into 8 bars. The combinations are endless with this recipe. My goal was of course to have a gluten and soy free bar – mission accomplished.
Lunch today was a salad – lettuce, red & yellow pepper, hummus and salsa. I also had 2 pieces of gluten free bread topped with red pepper and melted Swiss cheese. There were 2 rice cakes included on the plate which tasted pretty good with salsa, hummus and veggies.
Then I had my second Oikos yogurt. Today I tried the vanilla flavor. It was not as yummy as the honey flavor but still an excellent Greek yogurt. I would really love to buy this brand on a regular basis but at Whole Foods one 5.3 ounce container costs $2.19 which I think is very expensive. I can buy a 16 ounce container of Greek yogurt at Trader Joe’s for $2.99 and a 32 ounce container of Chobani at Stop & Shop for $5.99. I will definitely allow a splurge every now and then especially so that I can have the Oikos Honey flavor again – it really was exceptionally divine.
This afternoon I am watching Rocco at my house for my sis. She dropped him off a little while ago and the dynamic duo have been enjoying some good old buddy time.
Exciting news – My new camera just arrived. I have the battery charging so hopefully I can use it tonight. I must read the owners manual – this guy looks complicated. We ended up getting this Sony Cyber-Shot which is a totally different camera than the old one. I really wanted to get something nice for the blog seeing as it is kind of like a job.
