A Soothing Ride

We have had a very pleasant day and had lots of fun.  Here is a rundown of the days happenings. 

We went to the gym and D was cool with staying in the babysitting room without Mommy. I had a nice workout (for indoors that is). I did 30 minutes on the Step Mill, 30 minutes on the Arc Trainer and then weights.

On the ride home I ate a Larabar that I had packed knowing that I would be famished when I was finished exercising.

When I got home I did about 15 minutes of stretching and foam rolling. I can really feel a difference since I started all this muscle TLC.  Then it was definitely shower time. 

For lunch I made a yummy salad.  In the mix – lettuce, shredded coleslaw mix, pumpkin, hummus, salsa, cottage cheese and 1/4 cup cooked & cooled brown rice.  I also had 2 Corn Thins.

I ended lunch with an apple and peanut butter. The next best combo to a banana and PB.

After lunch D and I had to run to the post office (the PB is in the mail DrMom) and then CVS.  I told him that since it was so nice out we could go to the park before we went home.  Well I think the ride was a little too soothing for him because he ended up falling asleep on the way there. 

I took the opportunity to take some pictures of my sweet little cherub.  Oh my goodness this boy is my HEART!! I seriously never knew that I could love someone this much.

I finally woke him up – you all know that a long nap leads to trouble at bedtime. 

We had a blast at the park.  We played catch with his baseball and glove – I keep it in the truck at all times just in case he gets the urge to toss a ball around.  Then he wanted to play on all the playground toys.  He was feeling daring today and climbed up a few things that he is usually too afraid to attempt.  He has never been a climber so this was a big deal.  I made a big deal every time he made it to the top and he felt so proud.  He also tried to go across the monkey bars a couple times (with my help). He is usually to chicken to try that too.  I was really trying to build up his confidence today so that he is willing to try new things at the park.  He did a great job today – he really is growing up too fast.

Once we got home I needed a little snack. I had 2 rice cakes with a piece of melted Swiss cheese.

Tonight’s dinner turned into another assembling process. I made chicken for Charlie so I decided to have some. I really do have to force myself to eat meat – it just is not on my list of things that I like to eat. The veggie section of dinner was a sweet potato, zucchini, red pepper and hummus. I took all the goods in the bowl, some chicken and a gluten free tortilla and made a wrap.  I actually cut the tortilla into 2 pieces so I was able to make 2 smaller wraps.

About an hour later I had a hankering for something sweet.  I made a dried fruit and nut plate to satisfy my sweet tooth.  It did the trick.

I checked the weather and it looks like it is supposed to be raining in the AM.  I really wanted to run outside tomorrow.  Oh well at least I got outside a few times this week.

Extra ZZZZZZ’s

This morning I decided to get a few extra hours of sleep since I did not make it up to bed as early as I was hoping to last night.  I got 2 whole extra hours – let’s hope that was enough to keep this mama going strong today.  

When I came downstairs to make breakfast, the only thing I wanted was oatmeal – I am such a creature of habit.  I did a little side by side action today.  One side of the bowl was oats and the other side was plain Greek yogurt.

I tossed on some cinnamon, banana chunks and Might Maple PB.

I am planning on heading to the gym with my sidekick.  It has been so long since I have taken him along while I exercise. I am hoping that he will still stay in the babysitting room without me.

We are going to have lovely weather again today – mid 60’s is the forecast.  Maybe D and I can get some fresh air this afternoon.  I hope you have a great day.

Hey Look no Salad

Good evening, did you all enjoy your day?  D and I had a rather nice day here at home. Sorry that I do not have anything super exciting to report – just a low key day. 

On that note I’ll just get to the point – FOOD.

My afternoon snack was plain Greek yogurt and a Cocoa Mole Larabar.  I love the sweet and spicy flavor of this bar.

For dinner I did not make a salad – I know shocking.  I did of course eat my veggies and hummus. I made a sampler plate with 1/2 cup pumpkin, 1/4 cup brown rice, 1/4 cup hummus, 1/2 cup plain Greek yogurt (seasoned with cinnamon), red pepper and a gluten free Brown Rice Tortilla.  I cut the tortilla into 4 pieces and did some wrap action.

Dessert was a Stonyfield yogurt and Enjoy Life Gluten Free Granola.

I was hoping to get into bed early tonight but that doesn’t look like it is going to happen.  Oh well, at least I am in my pj’s already.  I still have a few things I would like to do before I turn in for the night.  I hope you have a good one.

It Was Already Time to Go

Happy Wednesday!  Today my sidekick and I had our weekly babysitting shift at the gym.  Before I knew it, it was already time to leave.  Those two hours seemed to go by much faster today.  D is now enjoying some pizza for lunch. I always try to have a TJ’ s Organic 3 Cheese Pizza in the freezer for a quick go to option. He requested pizza so out it came. 

Here is a recap of my eats so far today. 

This morning I did a 5 mile run outside and then 25 minutes on my Water Rower. Of course I did a bunch of stretches and some foam rolling. 

Breakfast was a fast bowl of oats. I managed to cook it on the stove and it still was speedy.  I added rice protein powder while cooking and the oatmeal turned super thick and creamy.

When it reached the desired consistency I poured it into my bowl and added cinnamon and blackberries. It was filled to the brim.

I packed this bar to have as a snack after babysitting.  I love the texture – it is chewy, crunchy and a little sticky.

Lunch was of course a salad and I am sure you can guess all the contents.

I then had an apple with raw almond butter. It was my sweet ending. I would really like to cut out the processed bars.  Not Larabars – they are staying for good.  Besides, you really can’t beat the list of ingredients.

It is almost 30 degrees cooler today.  The sun is shining an it is actually gorgeous out there.  I am not sure what we are doing for the rest of the day. I hope you enjoy yours.

It Was a Warm One

Today we did indeed hit that 90 degree mark on the thermometer.  I think tomorrow is supposed to be much cooler so we are not in a heat wave. 

Before D and I went to the book store I had a mini Apple Pie Larabar.  I really do like this smaller size.  Why will they not make these little gems available in the grocery store?  I would buy every flavor.

There were only 3 kids at story hour today.  Everyone must have been soaking up the sun.  The stories were very cute and D liked all 3. 

When we got home it was lunch time.  My salad today was nothing out of the ordinary – lettuce, shredded coleslaw mix, roasted red peppers, salsa, hummus and cottage cheese. I at the salad with 2 Corn Thins and 2 rice cakes.

After lunch I took D to the park for a few hours.  We met one of his friends there and they had fun playing.  They brought along a kite so there was some fun trying to get the kite to fly.  It was actually very windy which was nice seeing as it was a scorcher out there today.

When we got home I had to toss my filthy monster into the shower – he was a mess.  After running around he was so sweaty and dirty.  I think that the shower refreshed him because he seemed much more lively.  I thought that he was going to fall asleep during the drive home – he looked wiped out.

Then I had a banana with raw almond butter for a snack.

I made another salad for dinner – I wasn’t in the mood for a hot meal and I can not get enough veggies.  This one contained lettuce, shredded coleslaw mix, red pepper, zucchini, hummus, salsa and cottage cheese. I also had a gluten free wrap – still not willing to look pretty for the camera.

I did a little experimenting for dessert. I started with a little plain Greek yogurt topped with a few Cupola Chai Pistachio Cookies. The cookies crumbled nicely into the yogurt – it was delicious.  I decided to try the same thing with a little more yogurt and Cupola Chocolate Cashew Cookies.  Again it was delicious.  I really like the texture of the cookies with the yogurt. The cookies almost melt into the yogurt – if that makes sense.  A little crispness remained but the mix turned extra thick.

D and I were without Daddy tonight – he is at a Retirement Party. I played a little Lego Star Wars on the Wii with him and then red him a few bedtime stories.  After I sang the usual tunes he drifted off within a matter of moments.  I think the afternoon of heat and fresh air really did him in. 

After he was in la-la land I did some weights. Since I have been running outside more frequently I have been slacking on my weights.  It felt nice to use my dumbbells. I made up a little routine as I went along and ended up doing a little over 30 minutes of training.

The Winner

Happy Tuesday!! I can’t believe what a gorgeous morning we are having.  The heat is on today – I can already tell the difference in temp from earlier when I was out running.

The sun was already up when I ventured out. I did a nice 7.5 mile loop and the whole time I was feeling nothing but thankfulness. I was happy to be running, to have the family that I was blessed with and of course all of you. This blog has become a  big part of my life especially because of the acquaintances that I have made.  It is the simple things in life that make this Mommy smile. 

Speaking of smile – this bowl put a big old grin on this girlie today.  It was delicious, creamy and filling.

I did the famous stovetop method today.  I cooked rice protein into the oats again –I  love how it adds that little extra bulk to the oatmeal (which I then feel in my tummy). I also stirred in some cinnamon during the cooking process. I topped it off with a banana and a few dabs of Mighty Maple PB.  This stuff is so yummy. It started to melt into the oats from the heat – oh boy it was stellar.

At Least We Won’t Bake like a Toasted Cheeser

Yes, I got my AC fixed but I had to wait at the dealer for over 2 1/2 hours with my little sidekick.  He was such a trooper. I let him climb all over the cars in the showroom so he was a happy camper.  Charlie let me take along his phone which is one of the fancy ones that has games you can play.  D played a Bubble Popping game for a little while but there was no way that he would find it interesting for the entire time. At one point he tossed the pointer onto one of the chairs because the game was ticking him off. Of course it slipped behind a cushion that was not a removable type. So there I was straddling this chair with my arm stuck in a rather difficult spot trying to retrieve something the size of a toothpick. I touched a few things that made me want to freak but I could see the pointer and I was not willing to give up.  I don’t know how I did it but I managed to get it out.  We then ran to the bathroom so that I could disinfect my hands ASAP.

The bad news – the repair was WAAAAAAAAAY more than I thought it would be.  I was not expecting to spend over $500 today.  I also got an oil change -add that to the bill please.  There is always something that comes up and takes a bite out of your wallet.  At least we won’t bake like a toasted cheeser when it hits 90 degrees tomorrow.  Even if I don’t have any place to go, I going to hang out in my truck parked in the driveway with the AC on – I’m gonna get my money’s worth. 

Would you like to hear about some food, after all this is usually a foodie blog. 

I packed a Cinnamon Larabar to snack on this morning while I was waiting.  Little did I know that I should have packed my lunch too. I did not take a picture because I was running out the door to get to the dealer so that I wouldn’t be there all afternoon – yeah that worked well.

When I finally got home it was after 1:00 and I was ready to chew my arm off. I made a salad – it was yummers. It contained lettuce, shredded coleslaw mix, salsa, hummus and roasted red peppers. I also had 2 rice cakes with melted Swiss cheese and 2 Corn Thins topped with Peanut Butter.

There was also some yogurt & cinnamon consumed along with a Cocoa Loco bar – which basically explains how I was feeling.

I had to drag my little doobie out and about again.  We really needed to hit Stop & Shop.  It only took us an hour so he was back home with his Star Wars friends in no time. 

I had an apple and a few Cupola Espresso Walnut Cookies for a snack when we got home.

Dinner was another salad.  It was so good – seriously I could eat this combo every day – wait I think I do.  It contained lettuce, shredded coleslaw mix, red pepper, salsa, pumpkin, hummus and cottage cheese.

I also sprinkled a few Cupola Parmesan Pink Peppercorn Clouds on top. They added a little crunch to the mix.  You all should know that my salad only stays this neat long enough for me to take a picture. After I get the snap I mix away – it tastes so much better that way.

I also had a gluten free tortilla with the salad.  I did some wrap action and it was delish.  Sorry there really was no pretty way of photographing this guy.

Cupoladua Oven Goodies

I was so thrilled when a package came to the door this afternoon – goodies for Sammie. Inside I discovered 4 boxes of Cupoladua Oven treats.  The co-founder, Stephanie, generously sent me these gluten and soy free products to test. As soon as I read the ingredients I knew that these would be something that would agree with my rather difficult digestive system.

The first one I tried was the Espresso Walnut.  WOW!!  These things have an intense flavor that I thought was amazing.  My hubs tested them too and this one was his favorite.  I was surprised that the cookies were not overly sweet but still delightful.

The texture reminds me of a meringue but not nearly as sweet. I liked the little crunchy walnut pieces – something that I did not expect. I could definitely see myself enjoying these with a cup of tea or a decaf coffee.

For dessert tonight I tried the other 2 sweet Cookies – Chai Pistachio and Chocolate Cashew.

This generous serving is 105 calories and 3 grams of fat – not bad for a sweet treat.

I really liked both flavors but the Chai really won my heart.  I love Chai tea so I knew that these would be my favorite.  Both had little crunchy bits from the nuts which was nice for a difference in texture. I probably should have waited to try the Chocolate Cashew because the flavor of the Chai kind of overpowered my tongue.  Charlie tested these as well and liked them both but the Espresso was still his top pick.

I tried a few of the Parmesan Pink Peppercorn Clouds with my dinner salad this evening.  The entire box contains one serving but I only had about 1/5 of it.

The Clouds were a bit crumbly so I topped my salad with them.  I tasted a few beforehand and the flavor was delicious. The cheese flavor was mild and the pepper really shined through. Charlie was wishing that they were a bit more heartier and greasier – of course he is the chip man after all.  I liked the texture and was glad that they were not at all greasy.

I love that on the side of each box they list ways to enjoy these little gems. For example, you could crumble the Cookies over ice cream, pudding or cobblers.  The Clouds can be crumbled over soup, casseroles or salad as I did.  They also give wine suggestions if you are a wine drinker.  I could definitely see these cuties being a hit at a cocktail party. 

I have not seen these sold at any stores here in MA but you can check the website and see if any retailers in your area are selling them.  You can also order all the flavors online. 

Thank you so much Stephanie. This tasting was such a joy to somebody that has such a limited diet.  I love that your products are made with ingredients that will not upset my tummy.  I give them all a big thumbs up!!
