Trust the Baker

I have tried a ton of different whole wheat pizza crust recipes.  I have used a mixture of all-purpose flour, whole wheat flour and cornmeal. I have also tried to go with an all whole wheat dough.  I tend to be the only one in my house that enjoys the all whole wheat dough. I really had not found a dough that knocked my socks off until today. 

I am sure you all know Kath and her husband Matt.  Well I just started reading his blog Brew and Bake, it is great. As a lover of homemade bread, I find his bread baking inspirational. 

I decided to give his recipe for whole wheat pizza crust a try.  If you see the photos you would too.  He has a very informative and simple step by step process right there on his blog.  I love that he weighs his ingredients – I have always done so in my baking too.  The dough doesn’t take that long to mix together even though he starts off with a soaker and a biga.  Trust me these steps are well worth it.

I found this dough extremely easy to roll out and I left it a little thicker than I usually like my crusts to be. I spread a little TJ’s Fire Roasted Salsa and canned diced tomatoes over the dough before adding the other toppings.  I kept it pretty simple – thinly sliced zucchini and shredded cheese.  I baked it at 550 degrees on a pizza stone for about 10 minutes.

I think that I will be making a pizza once a week with this dough – I could seriously eat it everyday.  It was chewy, crunchy and soooooo flavorful.  I could definitely tell that the prep work added to the enhanced nuttiness and chew factor in the dough. Neat time I might try letting the soaker and the biga rest a little longer before mixing the final dough together. Today I only waited an hour. I can just imagine how over the top this would taste with an over night ripening. 

Next time you need a pizza crust recipe, trust the baker.  I did and I won’t need to look any further for my go to dough recipe.  I found it over at Brew and Bake – go check it out.  Unfortunately I am not a beer drinker so I won’t be brewing up anything like that but it is at least cool to read about.  Thanks Matt – this dough was amazing.

Homemade dough=way better than store bought. I haven't tried Matt's version but I may have to after seeing these pics! Yum!
