Goodies

I told you earlier today that we were going to the doctors with Charlie.  He had to go to a podiatrist because he somehow got superficial frostbite know as chilblains – yes it is kind of freaky looking.  My poor guy has it on all 10 toes and he was having a tough time wearing shoes this past weekend.  The only way to cure this is to NEVER let his feet get cold AGAIN.  If he does not take care of his feet and the chilblains do not heal he could get an infection and potentially loose toes.  I am totally going to be the sock and slipper Nazi.  If I see him so much as walk 2 steps barefoot this winter his butt is toast. 

When we got home I had to prepare lunch ASAP because D’s friend Henry was on his way over. 

I had a pita with melted Swiss cheese and Sweet Potato Food Should Taste Good tortilla chips.

On the side I had some carrots and celery with 1/4 cup hummus which I sprinkled with my favorite seasoning blend (curry, cumin, cardamom, coriander, turmeric and paprika).

I also enjoyed a cup of tea and a Z Bar while chatting with my friend Kathy.  It was nice to have an adult conversation this afternoon.

Later in the afternoon I mad my usual 1/2 cup Greek yogurt, Cinnamon Puffins, TJ’s High Fiber cereal and tbsp PB mixer.

Dinner was a warm salad seasoned with my fav. blend.  I cooked zucchini, broccoli, tomato, and red pepper in a pan sprayed with nonstick spray.  I served all that scrumptious veg with a bed of lettuce,  1/4 cup Greek yogurt for protein and Flat-Out chips for crunch.

Now lets get to the goodies.  I received a box of raw treats from Raw Reform this afternoon.  My hubs and I tried a few Kale Chips – WOW!!!  I was so shocked how good they are.  At first they are crunchy but then they kind of melt onto your tongue – kind of weird but good.  Charlie tried the  Raw Mineral Rich Crunch – way too many seeds for me.  He really liked it and said it reminded him of those Asian style rice crackers but with a heartier texture.  Stay tuned for more reviews, as you can see they generously provided us with some interesting stuff.

I did my favorite 60 min. Yoga For Runners class tonight.  I’m still using the space heater while I do this class and it feels so nice to get my body warm and comfy for a whole hour.  I’m watching What Not to Wear and ready to just chill out before heading up to bed.

Tomorrow D has karate and then we are going to get Charlie new winter boots, furry slippers (by that I mean faux fur) and lots of warm socks.  Sounds like lots of fun.

SPEEDY

I am still alive just crazy busy. D did in fact have to have 2 shots yesterday - he freaked!!!
I took him to Target and bought him a Spongebob Lego set - he is now all better.
So let me rip through the eats because I am at Panera with my guys on our way to a doctor appointment for Charlie.

I made it to the gym this morning and came home and made a glorious bowl of oatmeal. It was mixed with cottage cheese then topped with blueberries, peanuts and shavings of Cacao Bliss.



Sorry this is so speedy but sometimes that is how my life is. This afternoon we are having a freind over to play so I am not sure when I will be back. I am going to enjoy my warm cup of tea right now and snack on a Kashi ROLL! Have a great Friday.

ROLL!

These things are great.  I snacked on this when we went to run a few errands this morning.  It was super chewy, sweet & crunchy – all things delish to my mouth.  Gotta love Kashi.

Lunch was another warm salad – it just feels so darn good in my belly.  I cooked zucchini, summer squash, red pepper and tomatoes in a pan sprayed with non-stick spray.  I seasoned the veg with my favorite spice blend, placed it on a bed of lettuce and added shredded cheese.  My accompaniments were tortilla chips and a pita.

I ending with a sweet Chocolate Brownie Z Bar and a warm cup of Sugar Cookie Tea.

I am off to take D to his appointment.  I told him the doc would probably look in his mouth and in his ears and he went ape.  He flung himself on the ground screaming & crying - I am in serious trouble.  He is making me feel guilty about making him go to the doctors.  I swear they better not try and give him any shots today – I think he may faint.  Wish me luck. 

A New Record

I finished the book I was reading and I am pretty sure I set a new record for myself. I NEVER read a book that fast – well unless it is one of D’s :) It was so good – I’m kind of sad it is over. That just means I get to start the other one that I got from the library – let’s see how long it takes me to read this one.

I went to the gym early again today. I am really enjoying my alone time in the AM and not having to rush through the place like a mad woman.

I was sure that oat bran was on the menu this morning. I really don’t think that I was meant to start my day with a cold breakfast – it is just not as satisfying. And right now after eating my delicious mixer of all things tasty, my tummy is feeling pretty darn happy.

I did the separate bowl technique again when I cooked the oat bran. Once I pulled the bowl out of the microwave I stirred in 1/4 cup cottage cheese and 1/2 cup pumpkin.

Once that made its way into a clean bowl the toppings went on – 1/4 cup Cinnamon Puffins, 2 tbsp roasted unsalted peanuts and a tsp of Raw Coconut Butter shavings.

The agenda today – try to clean a little, we might have some visitors tomorrow. Not that my house is a pit or anything but I do need to dust – oh how I hate to dust. Of course once I start cleaning the vacuum comes out because I can not possibly have a day when I do not vacuum – I live for it. Plus I love clean floors.

This afternoon my little dude has his 4 year check-up. He is soooooo not happy about having to go to the doctors. He keeps telling me that he is not going. Ugh, I can see it now - I am going to be the mom at the Dr.’s office with the screaming child today. I just might have to resort to bribery.

Playtime is Finally Over

I really never had a second to stop and post this afternoon.  My D man had me going ALL day.

Yes I had 2 salads today – lunch was a warm salad with pumpkin, Greek yogurt & tortilla chips as the accents while dinner was a cold salad with nuts, 2 hard boiled egg whites and more crunchy tortilla chips.  I finally caved and had some of those little beanies.  Which worked out good because after consuming them I ran a marathon around my dining room table pretending to be Tom chasing Jerry.  I think we wore a groove in the floor.  Thankfully I didn’t get sick running in circles for an hour. I also enjoyed the last of my frozen yogurt (there was only like 1/4 cup left).  This stuff is seriously the best frozen yogurt on the planet.  It stinks that they only sell it in little containers and I think it is a bit on the pricey side.  Oh well, it was a nice treat to have.  Tonight I jazzed up my mini scoop with a little granola, Heart 2 Heart and some Cacao Bliss shavings.

We really had a fun filled day of activities.  Being stuck inside all day can be a real downer but thankfully I was able to entertain the little monkey pretty well.  We played cards this morning – D made up his own games and I just played along.  Then there was some car action and Legos – one of my favorite things to platy with, must be my inner artist and my need to create things with my hands.  Of course Tom & Jerry chasing each other for a loooooooong time.  Then we played football – only soft footballs allowed in the house.  Finally we hunted droids with our laser guns – we were the Jedi.  I managed to make some dinner while he was drawing – the only time he would let me stop playing with him.  Well actually I got to sit and eat lunch but that was only like 15 minutes – I just love inhaling my food. 

Here are some pictures of my crazy man – yes he stayed in his PJs all day.  Why dirty more clothes?  I at least brushed his hair which he hates.  He would be totally fine looking like a dirtball – I guess that is a boy for you.

Cancelled Again

All the schools in my area are canceled due to the snow storm.  That means that there will not be babysitting at the gym and D & I get the day off.  I swear it seems like we have had snow on Wednesday a lot this winter.  This is the second time the sitting has been canceled but I have been there a bunch of times during snowy activity as well. 

Last night I did the Yoga For Runners Class (60 min) on Yoga Download so my muscles are feeling it today.  If you have not tried this class you should, it was great.  This morning I just did cardio at the gym – 30 min. ACR Trainer w/handles (I love how it works my upper body), 4.25 mile run, .75 mile walk.  The snow was coming down lightly which did not effect my trip there and back.

For some reason this morning I was really craving a cold mess.  I gave in and mixed up a bowl of chaos.  I started by mixing 1/2 a cup Greek yogurt with 2 tbsp wheat berries.  Then came the toppings – 3/4 cup Cascadian Farm Organic Maple Brown Sugar Granola, 1/4 cup Cinnamon Puffins, 1 tbsp roasted unsalted peanuts and a drizzle of cranberry apple butter.

It was delicious but I think I made the wrong breakfast choice. It did not leave me as satisfied as my oat bran.  That is the main reason why I have not been eating this sort of thing for breakfast lately – I hate that I get hungry so quickly after eating this.  Warm oats = happy belly for hours :)

Bake Sale Brownies

This afternoon I tried a recipe from Cooking Light Magazine.  I have been wanting to test it out for a while but have yet to do so – not sure why.  I would like to make these brownies for Meghann’s Bake Sale so I needed to to a trial run first.  The recipe is Fudgy Mocha-Toffee Brownies found in the September 2007 Anniversary Issue.  It was actually very easy to prepare and my house smelled amazing.

Charlie did indeed sample the finished product – he loves them.  I can’t eat the topping – it has milk chocolate toffee bits.  I did try a tiny nibble of the inside – yes, it tastes like fudge.  I can’t wait to hear the co-workers reaction.  I feel pretty good about donating these.  If you like coffee and chocolate then these are sure to please.

Onto my dinner.  I made a delicious salad with lettuce, zucchini, oranges and almonds.  The dressing was Maple Grove Farms Fat Free Balsamic.

With my salad I made a grilled cheese with tomato.  I layered light Swiss and tomato between 2 pieces of Ezekiel bread.  I spread 1 tsp of Earth Balance on the bread before grilling it in a pan.  This was a childhood favorite of mine, with American cheese of course.  As an adult I quite enjoy other varieties of cheese.

Dessert was a brownie that won’t cause havoc to my skin – Z Bar style with 1/2 a tbsp PB.  I heated this bad boy in the micro for a few - it was warm and gooey.

Crispy Pita Bowl

Today has been a warm food sort of day.  It feels very comforting to fill my tummy with something tasty and full of heat. This morning I had a toasty snack of wheat crackers and a piece of melted string cheese.

D and I had to run to the bank, the post office, fill the truck with gas (don’t want to be needing to do that in the snow) and then to the grocery store.  Yes, the place was mobbed.  We barely made it out alive. 

When I got home it was definitely time for lunch. My belly was in need of some more warmth. I made a crispy pita bowl in the oven by baking it in a small round casserole dish until it was nicely browned and toasted.  I filled the pita with cooked red pepper, zucchini, tomato and chic peas.  I seasoned the veg with my favorite spice blend – cardamom, cumin, coriander, paprika and turmeric.  I just cooked up the veggies in a pan sprayed with non-stick spray – it was fast and super easy.

I had a serving of Food Should Taste Good Jalapeno tortillas on the side.  These tasted yummy with some veggies on top.

Despite all that food about an hour and a half later I was HUNGRY.  So I made a cup of tea and munched on a Kashi bar – my new favorite flavor.

My second afternoon snack – can you say bottomless pit.  I had 1/2 a cup Greek yogurt, a chopped golden delicious apple, lots of cinnamon and a tbsp of PB.

D and I did some reading this afternoon. He is still enjoying the Magic Tree House series – we are on book 8. I also did some baking – a new recipe I wanted to try for Miss Meghann’s Bake Sale.  I wanted to make sure that it would turn out yummy before I try to donate it.  My hubs and his co-workers are the guinea pigs. I will reveal the details later.  Time to make dinner.  See you later gators.
