I Voted

D and I headed to the polls which is practically across the street form my house. I am really excited about voting today - I can't wait to see the outcome.
For lunch today I did a little experimenting and it ended up turning out good. I mixed 1/4 cup oatmeal with water, cumin, paprika, salt, pepper, parsley and basil (spices were just eyeballed). In a separate bowl I mixed 1/4 cup chic peas, 1/2 cup spinach, about 2 tablespoons of golden delicious apple chunks then cooked in the microwave till apples were tender. I topped the cooked oats with the spinach concoction. I really liked the sweetness the apple added to this dish - I will be making more things like this.

I had to have a mess - even though my b-fast was yummy I really missed it. I mixed 1/2 cup greek yogurt, the rest of the golden delicious apple, summer squash, Kashi GoLean, and White Choc. Wonderful PB.

I received a package in the mail this afternoon and I still have not opened it. You will just have to stop back by tonight when I reveal what it is.

I love your creativeness with oats! I am not sure you ever mentioned this, but what are your food allergies? I know you had to "trial and error" to figure it out, but I'm curious. Did you have stomach issues or just skin? You look beautiful now for sure! I have my own food intolerances, and just wondered what you look for when trying to avoid your "no" list! Thanks for your blog and for taking time to answer.

I have IBS so too much fiber tends to irritate my system. I love all foods that are in the fiber category so I could never totally eliminate them. I try to eat veggies that are easy to digest - canned pumpkin being my staple. I don't eat a lot of corn, peas or beans. I have also found that dried fruits and nuts are a trigger that leaves me uncomfortable for days - that is why I eat nut butters. I can't have artificial sweetener - it makes my stomach sooooo bloated and I am terribly gassy. I used to eat Danon Light & Fit yogurt all the time and wondered why my tummy ALWAYS ached. Well it was the the sweetener. I much rather eat plain yogurt and add something that I know is not artificial. Plain greek yogurt has way more protein a tiny bit more calories AND it stays with me much longer. I try to eat simply because I think that my body responds to food much better when I do so. I avoid high fat meats - which I have never been a fan of. I never eat anything fried or doused in butter. I actually never use butter - I prefer olive oil. I Have always been a very picky eater. I try to experiment with things that I know I usually enjoy. I hope that answers your question - feel free to be a little more specific if there is something that you see me doing and are curious about. Thanks for asking the question - I actually don't think I get asked enough of them.

Okay, so, I definitely had a chickpea-spinach-spice mixture for lunch as well, haha - love it! :0)

Out of curiosity, how many calories are your "messes" typically? I guess it would vary whether it's a snack or a meal but generally...Also when you say that you put squash in your mess, how do you prepare it?

The calories depends on what I mix up - sometimes 300 but maybe 500. In the AM they are usually around 450 - 500 and in the afternoon around 300 400. I eat the summer squash raw.

Thank you so much, Sammie. I had my hubby read your resonse. My stomach is a mess (the bad kind of mess, not like your yummy meals of mess!) and it can be so frustrating. I have been the GI doc (diagnosed with IBS and told to eat more fiber, haha since my diet is loaded with fiber) and the allergist said I have some oral allergies to sweet potatoes and a few things, which helped my skin but not my belly. I am not sure if dairy is my deal or wheat or what. Many of your symptoms are (were) similar to mine. I agree 100% about artificial sweetners. Do you have any problems with evaporated cane juice that seems to be in so many Kashi products?

I don't think so - I eat Kashi products every day. I forgot to mention soy - I am very sensitive to that too. I can only eat a little bit of soy - but tofu is a NO-NO.
The dairy I consume is Hormone Free only.

So would you classify your lunch as a "savory mess?"

I had one myself for lunch with spaghetti squash, kalamata olives, raw green beans and hummus!

Yay for being brave and trying new things! Hopefully our country will be today too!

Oh, and PS, I strained my yogurt and its close to the Greek variety. Maybe a little tangier, but still pretty rich and smooth!

thanks sammie for your speedy reply:) regarding calories for the messes...sometime they just look so big in the picture that it's hard to get perspective. I guess the ratios of carbs/proteins/fats are dependent on where you want the calorie emphasis from. Is your cottage cheese nonfat or lowfat? I can't seem to find organic nonfat cattage cheese here in Tampa.

I eat low fat cottage cheese. My messes can be pretty big depending what I am eating for that meal. If it is the only thing I eat then it will have ALL the calories I need for that particular meal. I have experimented with the # of calories that I need at certain times during the day - it has really helped.
