Making Room

This afternoon I did a lot of reorganizing – time to make room for our Christmas tree.  D is so funny about his toys.  I moved things that he rarely plays with around and what does he do, starts to play with them. He has a drum set which he NEVER plays with anymore, well I moved it up to his bedroom and he ran up there and started banging out a tune.  I am glad that he is enjoying the toys that he has been neglecting for so many months.  Now we are just going to add to the mass – double time – his birthday is the 14th, yikes!!!  I don’t think my house is big enough :)

Dinner was a quick and easy meal tonight.  I had sweet potato “fries” (obviously minus the fry)which got a little too crispy – I think I will stick to the rounds, organic chicken sausage which I removed from the casing before cooking (I almost always remove the casing because I don’t really care for it) and ….

a Sandwich Thin with melted shredded cheese and PB & cranberry apple butter.

I am munching on a golden delicious apple at the moment.  If I get hungry later (I probably will), then I am going to make a cup of  Sugar Cookie Sleigh Ride tea which will have to be accompanied by a Chocolate Brownie Z Bar.

Time to go help Charlie brush Otto’s teeth – hey the dog needs to have good hygiene too.  I hope you had a great weekend.  See you tomorrow.

Tea Extravaganza

The weather today is so crummy.  Thankfully I got my run in before it turned to rain.  While I was out it started to spit little ice shards into my eyes – the last 2.5 miles were not the most enjoyable.

Breakfast today was really early – I was up at 5:45 but managed to hold off eating till 6:30.  I made a yummy bowl of goodies using a tiny banana – it was about the size of my hand. Also in the mix was 1/2 cup Greek yogurt, 1/4 cup pumpkin, 1 Weetabix biscuit, Cinnamon Puffins, 1/4 cup cran-apple sauce and a tablespoon of PB.

After my 8 miler I ate a sliced apple and a piece of lite Swiss cheese.

For lunch today I tried a can of soup from Trader Joe’s.  Usually I avoid canned soups because they are super salty but this one was low sodium so I thought it would be worth a shot.  Well it was delicious – a bit on the sweet side and not at all salty.  It was full of yummy beans, potatoes, veggies and pasta.  I also had a PB & J sandwich on TJ’s Sprout Wheat Bread.

This afternoon I went to Stop & Shop and had my self a tea extravaganza – I have been looking ALL over for these.  AND there were coupons on the display.  I am having the Sugar Cookie flavor with my afternoon snack – it is so yummy (I am glad that I grabbed 2 boxes of this one).

The snack I am having is 1/2 cup cottage cheese, 1/4 cup pumpkin, 1/4 cup TJ’s High Fiber Cereal and a gluten free bar.

My honey is hard at work replacing the door knobs and adding new door sweeps – our house is way too drafty.  It is a nice relaxing Sunday here at my homestead.  I hope you all are enjoying the day as well.

See you after dinner.  I am so thrilled that Desperate Housewives is on tonight – I can’t wait to see what kind of excitement occurs in this episode.

Shopping with my Sissy

Last night my sissy & I did go Christmas shopping and I got lots of great things for my family and of course my main man, D. I can’t wait to see his face when he opens his gifts – that makes Christmas so much fun.  I remember the excitement as a kid so it brings back all those feelings again to see my child all crazy & ecstatic on Christmas morning.  I think my favorite gift that I got him is a tent that goes over his bed so he will be able to camp out every night.  It even has rollup window panels – it is the coolest thing.

Here is a quick recap of my eats:

The Saturday that feels like Sunday

I think it must be from the holiday – today feels like a Sunday to me.  D had karate this morning and while we were there I got to chat with my sissy.  I think she and I might try to go Christmas shopping later tonight after the kiddies are in bed.

I went for an 8 miler this morning and I felt great the whole time.  As soon as I stopped though my head filled up with disgusting mucus – sorry to be so yucky.  Why is it that I feel wonderful during exercise but then I feel like dung when I stop????  At least I made it through my run without any issues.

Before I left I made a mini mess – 1/2 cup Greek yogurt, a banana, 1 Weetabix biscuit, 1/3 cup Cinnamon Puffins, cranberry apple butter and 1/2 a tablespoon PB.

After my run I ate a Kashi Waffle and an egg. I cooked the egg in the microwave and it turned out pretty good – it was actually nice and fluffy.

When we got home from karate I had to eat a snack.  I sliced an apple and ate it with a piece of Swiss cheese.

For lunch today I had 1/4 cup cottage cheese mixed with 1/4 cup cran-apple sauce and cinnamon.

Plus I had a roasted acorn squash (sprinkled with cinnamon) and a PB & Jelly sandwich on TJ’s Sprouted Wheat Bread.

We are off to Home Depot – lots of little jobs to do around the house today, like replace a few door knobs that are probably older than I am.  When you are not sure if the door is locked that means it is time to get a new one.

Enjoy your afternoon.

Cran-apple Sauce

After my yogurt, acorn squash, TJ’s cereal snack I was still feeling hungry so I ate one of my Gluten Free Bars.

Tonight I wanted to make more cranberry sauce because I have already eaten all that I made the other day – it was so yummy.  Instead of adding sugar and agave nectar, I added a  peeled, cored and chopped apple  to the cranberries and water.  I let the mixture cook for about 10 –12 minutes.

I used some of the cran-apple sauce as a topping to sautéed zucchini (I cooked it in a pan sprayed with non-stick spray) which was over a bed of lettuce.  My recipe produces a very tart sauce but I actually prefer it that way.  I would much rather taste the fruit than taste nothing but a sugary gelatinous mess.  My bowl here looks strange but it worked for my palate.

I also stuffed 1/2 a roasted acorn squash with the cran-apple sauce – again another yummy combo.  On my plate is 2 pieces of TJ’s Sprouted Multi-Grain Bread (each slice has 5 grams of protein) woo-hoo!!!  I topped one slice with lite Swiss cheese then popped in under the broiler and the other slice has a TBS of PB.  The bread is delicious.  It is made with high protein sprouted wheat berries so it has a great nutty taste and a chewy texture.

My meal was followed up with a wedge of dark chocolate which was awesome. I like to let it melt in my mouth – it last longer and it gets very creamy.  I find that if you simply chew it, the chocolate flavor doesn’t fully come out.  Charlie quite enjoyed this chocolate too – you all know what a chocoholic he is.

I am still feeling so stuffy – I hate that wacko feeling in my head.  I think a nice warm cup of tea would be so great tonight.  We are going to watch a movie – Sense and Sensibility – I haven’t seen it but my huz has.  He is so sweet to watch it again.  Of course with my tea a Chocolate Brownie Z BAr would be the perfect treat so that is just what I am going to have.  I hope you had a great day.  Good night.

Mommy is not Allowed to be Sick

I managed to get the cleaning done in about 2 hours.  I brought along a PB & pumpkin Sandwich Thin (1 TBS PB and 2 TBS pumpkin) and 1/2 cup Greek yogurt mixed with more pumpkin to eat after I was done with the dirty work.  We went to Trader Joe’s on the way home so at least I wasn’t starving while grocery shopping.

Now that we are home it is almost 3:30 so I needed to have something to eat.  I opted for another 1/2 cup Greek yogurt, 1/2 a roasted acorn squash, 3/4 cup TJ’s High Fiber Cereal and a tablespoon of cranberry apple butter.

My face has that tingly feeling and I am itchy through my nose and eyes.  I better kick this thing in the butt ASAP – mommy is not allowed to be sick.  I have WAY to many things to do to be ill.  Like when I am done eating and posting there are a few heaping piles of laundry waiting to be washed, dried and folded.

Enjoy the afternoon – see you after diner.

Sweat Out the Germs

Yesterday I started to feel a little bit of a dry throat but thought it was from breathing in the cool air during my run. Well nope that wasn’t it – I have a cold, yuck!!! Thankfully I don’t feel bad, I just have a very runny nose and the irritating dry throat is still present.

I went to the gym this morning to sweat out the germs. I didn’t run, I think Charlie would have locked me up if I did. He knows that I hate to take a day off from running but really stressed the idea of a rest – I agree it was much needed after yesterdays trek.

For breakfast today (after the gym) I made a yummy mess. In the bowl was 1/2 cup Greek yogurt, a banana, 1 Weetabix biscuit, Kashi Heart 2 Heart, Cinnamon & Original Puffins, cranberry apple butter and a tablespoon of PB. As always, my favorite way to start the day.

We are off to my sister-in-law’s house so that I can get rid of the dust bunnies that have accumulated over the past 2 weeks. While we are out we will be making a stop at Trader Joe’s – D ate the last of his yogurt this morning and I need to restock my supply.

Have a great day – hopefully you are lucky enough to have the day off. If you are going Christmas shopping, well, you are brave and have fun.

Our visit to my Nana’s was nice and dinner at the in-law’s was also wonderful. It was so great to be with our families today. I hope you all enjoyed the day.

I am up early tomorrow – it is a cleaning day. My honey is actually going to come with me.

See you in the AM.

Edit: I am going to have a warm cup of tea and a Z Bar - my tummy is hungry.

Thanksgiving Half

Happy Thanksgiving!!!  I hope you are all with your family and friends to celebrate this day of thankfulness.

I did indeed rise early today and hit the pavement.  I ate a Maple Nut Clif Bar before my journey.  It was very sweet but proved to be good fuel for my half marathon that I ran this morning.  That’s right, I finally banged out 13.1 miles and my finish time was 1 hour 49 minutes.  It feels so good to know that I have the ability to run that far.  I am thankful for the legs and strength that God gave me.  Strangely, I was not hungry when I got back home so I hopped in the shower which was so refreshing.

Once it was time for food I of course made a messy bowl of yumminess. In the mix was 1/2 cup Greek yogurt, 3/4 cup pumpkin, a banana, 1 Weetabix biscuit, 1/4 cup Kashi Heart 2 Heart, 1/4 cup Cinnamon Puffins, 1/4 cup Original Puffins (I had a cereal party), 1 tablespoon cranberry apple butter and 1 tablespoon PB.

The PB swirl and cranberry apple butter were the stars of the show.

I am just doing my normal household duties – laundry, dishes, cooking.  You all know what a weirdo I am about other people’s cooking so I am roasting some veggies at the moment to have for eats later on in the day.  I know my mother-in-law will make turkey (I am not the biggest fan of it), stuffing (I absolutely despise it – yuck!!!), green bean casserole (I will not eat that either), baked sweet potatoes (I like my roasted version better – so that is what I am making) and I am sure some kind of bread. The list of things I will consume is short so I will take along my own food.  The holidays for me are not about consuming mass quantities of food, it is a time to be together with my family.  I much rather eat the way I always do because my body appreciates the healthy foods that I put into it.  Years of tummy aches have left this method of eating essential to my well being.

Enjoy your day.

First for Gluten Free

I tried my first ever gluten free bar this afternoon.  I like to have a variety to choose from and this one looked good so I thought “why not”.  The picture makes it look pretty decadent.

The bar is not that big but it definitely had that nice soft center.  I really liked it and very glad that I bought the box.

HPIM5830 HPIM5834

I also had a 1/2 cup Greek yogurt with a cranberry apple butter swirl – how pretty.  Of course I ended up mixing some of the bar into it – another great combo.

HPIM5832 HPIM5835

For dinner tonight I had another stuffed acorn squash – I am addicted to them.  I roasted it till it was super soft which then melts in my mouth.  I stuffed it with 1/2 cup cottage cheese then sprinkled on cinnamon.  I also had 2 mini whole wheat pitas. I topped one with a tablespoon of PB and cranberry apple butter and the other one I tossed under the broiler to melt a few tablespoons of shredded cheese.

Now that my little man is off to dreamland I am going to enjoy the last 1/2 cup of my Stonyfield Farm Chocolate Frozen Yogurt and a Z Bar.  I will probably eat them separately so that I can have my usual warm cup of tea with the bar.  I love to sip and take tiny bites – I find it soothing and more enjoyable than wolfing the whole thing in three bites.

Tomorrow morning I am venturing out for a long run.  The plan is 10 miles but I might add a few extra on if my body is up for it.  I am still piling on the miles for the Challenge which ends Sunday.  So far I am up to 106.68 miles since 11/9.  Unfortunately I have no idea where I stand in the contest.

I hope you enjoy your evening.  I’ll see you all in the AM after I get back from my adventure.  Goodnight.

Beautiful Food

Happy Wednesday my blog friends.  I am sure a bunch of you are counting down the hours till you get to have a nice break from work and/or school.

This morning I made it to the gym for my workout at 5AM.  It was a chilly one today – there was actually frost on my truck.  When I came home I made a beautiful bowl of goodies – same as yesterday.  I just love the color of the cranberry sauce in the mess.  Under that mound of deliciousness was 1/2 cup Greek yogurt, 1/2 cup pumpkin, a Weetabix biscuit, 3/4 cup Cinnamon Puffins and 1/4 cup Kashi Heart 2 Heart.  I topped if off with a tablespoon of PB.

HPIM5821 HPIM5822

Babysitting was crazy this morning – there were so many older kids today.  I am pretty sure it was due to the fact that there wasn’t any school.  I felt kind of bad for them – they seemed bored.  The room is nice for younger kids but anyone older than 7 or 8 wouldn’t really have much to do.  There are coloring books but the crayons are lame (there are like 10 and they are broken into itty pieces).  I was thinking about picking up a pack to bring in because so many kids are always asking to color.  D had a good time playing – thankfully he can always find something to do.

When we got home I started making my lunch.  I was so in the mood for a big old bowl of veggies.  I saw Miss Gliding Calm’s Mexi-Meal the other day and have been dying to make a dish inspired by hers.  I used a small zucchini, a small red pepper, 1/2 a green pepper, a medium tomato and 1/4 cup black beans.  First I cooked the zucchini and peppers till soft but not mushy.  Next, I added all the tomato and the black beans to the pan.  I let them mingle for a few then added chili powder, garlic powder, cilantro, cumin and paprika (there was no measuring involved, just added to taste).  Once the mixture was completely combined I put it in a bowl and added 1/2 cup cottage cheese.  The cottage cheese separated a bit from the heat so if that wigs you out then don’t use it – I wanted the protein.  You could also just use shredded cheese and let it get all melty on top – mmmmmm! I also added a few splashes of Frank’s which added an awesome kick.  This dish was super yummy.  She used avocado in her recipe but I am really not a big fan of it – I know it is good for me so maybe I will try it next time. Thanks for the inspiration Miss Gliding Calm!!!

With my massive bowl of veggies I had a toasted Sandwich Thin topped with Swiss cheese and PB & cranberry apple butter.

I think we finally have our plans in order for tomorrow.  We are going to stay home for most of the early part of the day then after lunch we will be stopping by to say hi to my family at my Nana’s and then it’s off to dinner at the in-law’s.  Unfortunately my mommy is not venturing down for the festivities – I actually think she is working – someone needs to feed the elderly people.  Even though she is not physically here she will be here in my heart – I miss her so much.

I hope you all enjoy the rest of your day. See you after dinner.
