Staying Power

I am finally home - this is going to be a quickie - my lunch is waiting. My bowl of oats & stuff stayed with me so well today - that is definitely my new breakfast : ) I guess you just can't beat a good bowl of oatmeal.
After cleaning today I snacked on a string cheese and a Honey Crisp apple - not a sweet as some of the other ones I have had but still delicious. I love apples.
I quite enjoyed myself at TJ's - I restocked my greek yogurt supply.

My VERRRY late lunch that has yet to be consumed is 2 toasted Ryvita crackers with melted light cheddar cheese.

Also a mix of greek yogurt, summer squash, Kashi GoLean, Cinnamon Puffins, apple butter and sunflower seed butter.

Even thought I have yet to take a bite I am very positive my lunch will be a winner. I can't believe what time it is - the day has flown by.

Successful Bowl of Oats

This morning I was up and out early to head to the gym - that is 4:43 AM on my clock. I ate half a banana before I left.

I was able to make oatmeal this morning without it soiling my microwave. It sure looked liked it was about to overflow after I mixed all my stuff into it. Here is what I came up with for a nice hearty breakfast - 1/4 cup oats cooked with water till very thick, then I added 1/2 cup cottage cheese, 1/2 cup pumpkin, 1/2 cup unsweetened applesauce, 2/3 cup Cinnamon Puffins and a tablespoon of peanut butter. I sure hope that says with me through the cleaning.

My father-in-law meets me over at my sister-in-law's house when I clean - he and D play the whole time. I will be making my usual stop at Trader Joe's afterward - I just love that place.
I am so excited to go trick-or-treating tonight. We are taking D out with Rocco, Mackenzie and Braydan - it should be a ton of fun.

Oatmeal- not so Almond Lace Cookies

This afternoon we made COOKIES, yay!!! D was a huge help - I just love that he enjoys baking. We made Oatmeal-Almond Lace Cookies from Cooking Light Magazine except we left out the almonds. I was going to use a different nut so Charlie can eat them but D requested no nuts. The recipe is supposed to make 36 but I think I made mine really small because I got 47. They are the perfect size for my little man. The cookies are very chewy and oaty. They really have a Fallish appeal to them.

I sampled two - that is D and his transformer sprawled out on the floor.

My afternoon snack also included 1/2 cup greek yogurt, TJ's High Fiber Cereal and apple butter.

I was not feeling very creative for dinner this evening so please forgive me for the boring meal. The cookies will just have to be the excitement. I broiled a Dr. Praeger's sweet potato pancake - these are really yummy.

And I made a very messy bowl of greek yogurt, unsweetened applesauce, Cinnamon Puffins, cranberry apple butter and sunflower seed butter. This is like dinner/dessert all in one - it was just what I really needed - quick, easy and delicious.

D and daddy are having a Smash Bros. battle before he hits the hay. My plan is to crawl into my nice heated bed, read and try to turn the lights off early. I'm getting up at 4:30 so I really need to get my sleep.

Up to Something

This morning I decided to use my WaterRower, dumbbells and resistance band instead of going to the gym. I have to clean my sister-in-law's house tomorrow which means if I want to exercise in the AM I will need to hit the gym at 5 AM. Having not gone today will really keep me motivated to get up at such an early hour tomorrow.

For lunch today I put swiss cheese on 2 Ryvita crackers then placed them under the broiler till toasty. I think I just found a new favorite cheesy goody. The crackers got really crispy and kind of nutty tasting.

I opted to have cottage cheese for some more protein. Of course I had to mix all kinds of stuff into it. Into the bowl went a sweet and juicy Honey Crisp apple, summer squash (yes, raw - it tasted GREAT), Kashi GoLean and sunflower seed butter. Adding the squash was a great way to sneak in a little veg to my lunch.

D and I have been up to something this afternoon - check back tonight to see what we made. Lets just say he would like to consume all of them. He has already eaten 5 - thank goodness they are small. Hint, hint - what could it be?? Charlie don't give it away - D already spilled the beans to daddy.

Explosive Oatmeal

I almost had oatmeal in my mess this morning but while cooking in the microwave it exploded all over the bowl. That is what happens when I make my breakfast and attend to D at the same time. I didn't feel like starting over again so I just went with ingredients that I knew would stay inside the bowl.
I mixed 3/4 cup Greek yogurt, 1/2 cup pumpkin, 1/2 a banana, Kashi Heart 2 Heart, Cinnamon Puffins and a tablespoon PB. This bowl is sure to please my palate.

I am sipping on a delicious cup of Raspberry Truffle tea - this has become a favorite of mine. I really love Chai tea but this flavor is so smooth and the smell is amazing.

Decadent Dessert

Finally my tummy is starting feel much better. I think cutting back on the veg today has really helped - thanks for being so understanding. It seems like some of you experience the same discomforts as I do when you consume to many fresh veggies.
I find yogurt to be very comforting when I am having intestinal issues - hence my afternoon snack - 1/2 cup Greek yogurt, a small plum and Cinnamon Puffins.

Due to the fact that I am taking it easy veggie-wise today I opted for a Dr. Praeger's Veggie Burger - not too heavy on the veg but it still allows me to get some. I also had an Arnold Sandwich Thin with sunbutter and cranberry apple butter, then for protein I had 1/2 a cup of cottage cheese.

I made my honey Cinnamon-Spiced Moroccan Chicken from a Whole Living Recipe. The only change I made to the recipe was using prunes instead of dates. I served his chicken over a bed of whole wheat couscous. He kept telling me how yummy it was and he thanked me over and over again for making him such a delicious meal, which was ready when he walked in the door I might add.

I bought the cookbook The Most Decadent Diet Ever! by Devin Alexander a while ago but I really have not made that many recipes from it. Tonight I cracked that bad boy open in search of a dessert and found a recipe called Chocolate Not-Only-In-Your-Dreams Cake. Now that sounds intriguing. I just happened to have all the ingredients on hand so I got to work - it is actually a very easy recipe. Here they are fresh from the oven.

And the little beauty waiting to be eaten. YOU MUST MAKE THESE!!!! They are amazing! The center is very soft, almost like a mousse. I ate mine with a little Good Karma Coconut Mango Rice cream - great combo. If you like dark chocolate then this is a dessert for you. You all know my huz's love of dark chocolate - well he quite enjoyed his cake. Honestly it isn't cake like at all, more like a flourless cake - rich and fudgy. I think I just found a new favorite in our house. D had a taste and liked it but he had already eaten his dessert so he will have to wait till tomorrow to have his own - there are 2 left. This recipe only makes 4 but I am sure you could double the recipe if needed.

Ok, on with that glorious recipe.
1/4 cup unsweetened applesauce
1 teaspoon vanilla
4 large egg whites
1 cup dark or light brown sugar (not packed)
3/4 cup unsweetened cocoa powder
1/4 teaspoon very finely ground espresso beans - I used ground instant espresso
1/2 teaspoon salt
1/2 teaspoon powder sugar - we didn't dust ours with this, I think it is sweet enough
4 raspberries - I left those off too - I don't have any
Preheat oven to 350 degrees.
Generously spray four 3 1/2 inch-diameter ramekins with non-stick cooking spray. Place them side by side in an 8 x 8 - inch baking pan. Add water to the pan until half way to the top of the ramekins.
Use a sturdy whisk or spatula to mix the applesauce, vanilla, egg whites and brown sugar in a large bowl until well combined. Add the cocoa powder, espresso and salt. Stir until just combined and no lumps remain. Divide evenly among the ramekins (each will be about two-thirds full).
Bake for 21 to 34 minutes, until the tops look silky and puff slightly and a toothpick inserted in the center comes out a bit wet. Remove from the oven and carefully transfer the ramekins from the water bath to a cooling rack. Cool for 5 to 10 minutes. Then invert each ramekin onto a dessert plate. Let stand for 1 minute and then slowly lift off the ramekin (the cake should come out on their own, but if they don't run a knife around the edge of the cakes to loosen them). Cool for another 5 to 10 minutes. Use a fine sieve to evenly dust each with a slight sprinkle of powdered sugar. Place a raspberry on the center of each cake, if using. Serve immediately.

Each cake has 203 calories, 7 grams protein, 46 grams carbohydrates, 2 grams fat, 1 gram saturated fat, 0 mg cholesterol, 6 grams fiber, 364 mg sodium.

Hummus Toast

I kept things simple for lunch - my tummy is starting to feel a little better but not 100%. I started by toasting whole wheat bread then topped it with a tablespoon of roasted red pepper hummus and a few tablespoons of shredded cheese. I put it under the broiler till the cheese was melty - this was so tasty. I never thought that hummus would taste good warm but it does.

I also mixed 3/4 a cup Greek yogurt, roasted acorn squash, Kashi GoLean, Reduced Sugar BB Preserves and PB. Of course this was the highlight of my meal - I love my yummy bowls of goodies.

I have to scoot out for a few - just to CVS. Sorry nothing too exciting to report today. It's just been an ordinary day around here this afternoon.

Cutting Back

Oh how I love my veggies, but they sure do not love my tummy. I ate WAY to much vegetable matter yesterday and I am paying for it today. I should have stopped once I had that salad for lunch - add all the veg from dinner and I pushed it to the limit. So just a warning to you all, my food today will probably not contain that much veg, I need to cut back for a little while.
My breakfast mess was cottage cheese, pumpkin (a veg that is much easier to digest), a banana, Kashi Heart 2 Heart, Cinnamon Puffins, apple butter and sunflower seed butter. A bowl of pure pleasure!

The babysitting went well today. I felt so bad for this little boy - not sure his age, I will guess a year - he wanted me to carry him around, if I put him down he would cry. I think he has a tooth poking through and he kept yawning so I bet he was tired on top of the gum pain. My guy really didn't like that I was holding a baby. He kept telling me to put him down - I knew this would happen. D got over it once I smothered him with TONS of kisses.
He just had his lunch - smoked salmon, organic vanilla yogurt drizzled with maple syrup and a Fudgsicle - I have to let him have some treats. He didn't sleep very well last night - he has been complaining that he is tired. After eating he went up to his room to lay down. I bet I'll find him snoozing. It is just about lunch time for me - obviously not a salad. I hope your day is going well.

Unexpected Fun

Another biggie post for you all - I was naughty and took the afternoon off and spent the day with my guys. My huz decided to work from home today, so this afternoon when he was finished we headed out for some fun.

I went to the gym solo today and a little later than usual (it was nice not having to rush out the door) - D hung out with Daddy in the office and some "work" of his own. Lunch today was a big salad - lettuce, carrots, summer squash, hummus, MGF dressing and a toasted piece of whole wheat bread.

I also mixed up cottage cheese with roasted acorn squash, an apple, Kashi GoLean and PB. Yes lots of fruit and veggies :)

I did a few things around the house while waiting for Charlie to finish working. Before we headed out I had a snack around 3:15 - 1/2 cup plain greek yogurt, TJ's High Fiber cereal and apple butter.

Then it was on with the fun!!! We went bowling - D was soooo excited.

Since we were out we decided to get some dinner. We went to a Vietnamese Restaurant that serves healthy and delicious food. We have only dined there once but have wanted to go back because it was so great. They have a bunch of veggie dishes and they do not use MSG. I ordered the Vietnamese Chicken Salad - boiled chicken over a bed of shredded cabbage & carrots. It was pretty small - I was hoping to get the steamed spring rolls as well but they only offer them on Friday & Saturday nights.

So I ate D's veggies (broccoli, cabbage, carrots, snow peas) from his Soft Noodle Veggie Plate. He only wanted the noodles and I only wanted the veg so it worked out well. I definitely got my veggies today.

This was Charlie's dinner - Crispy fish with veggies and transparent noodles.

At home I mixed up what I was going to call dessert but now it's more like a snack because...

me and my honey had a few of these after D was asleep.

These are the best gummies - sooooo soft and fruity. We both agree that the lime isn't that great but the grapefruit flavor is awesome. This one is raspberry -mmmmmmm delish!!!!

So that was my day - an unexpected treat on a Tuesday. We had an awesome time - I am the luckiest mommy/wife. I really am thankful for the life that I have - I couldn't ask for anything more.
It's time for me to crawl into my nice warm bed. I am going to try to go to the gym at 5 AM - I have to babysit at 8:30. Which means my breakfast post will be a bit late tomorrow.

Early to Rise

Last night I did get in a good 90 minutes of reading - just over 100 pages to go. I ended up going to bed at 9:30 - a little early for me these days. I wasn't surprised this morning when I started waking up 5:30 - ugh! I tried to fall back asleep but no luck. I ventured down to the kitchen and made a cup of Raspberry Truffle Tea - mmmmm!!! I also started preparing my breakfast but I didn't want to at too early - believe me, my tummy sure was ready for it.
I munched on a plum while I let the Kashi Cinnamon Harvest cereal mingle with the greek yogurt for about 45 minutes - it is super thick now.

Once I was ready to eat - around 7 - I added Cinnamon Puffins, apple butter and sunflower seed butter. Honestly I have only taken a couple bites - I made myself another cup of tea, which I will enjoy while slowly conquering my messy bowl of delicious goodies.

I hear the little creature upstairs roaming around - he will be in need of some eats soon - I wonder what he will request today? His usual breakfasts consist of waffles, organic vanilla yogurt (drizzled with honey or real maple syrup) or Kashi Heart 2 Heart which he also likes to top with maple syrup or honey. He makes breakfast pretty easy for me - he is like his mommy - once he finds something that tastes good he sticks with it.

Salsa Stuffed Potato

I know this is way earlier than I usually post in the evening but I am hoping to get some reading in tonight. Also I am really looking forward to crawling under that heated blanket.

After my trip to the grocery store I needed to have some food. I bought this delicious apple butter today and decided to incorporate some into my snack.

I had the other 1/2 of my apple from this morning, 1/2 cup greek yogurt, TJ's High Fiber cereal and the apple butter.

For dinner I was in the mood for a baked potato - I got 2 biggies at the store today. I stuffed mine with salsa and had spinach, hummus and carrots as well.

Here is my huz's potato - it is under there somewhere. I mixed Morning Star Farms crumbles, corn and salsa. I topped his potato with that heap of veg. then added shredded cheese. Now that is a baked potato.

For dessert I had cottage cheese, mango & pineapple chunks (they were frozen so I thawed them in the micro for a few seconds), Cinnamon Puffins and sunflower seed butter.

It is time to get my little monkey in bed. I hope you all had a great Monday. See you in the morning.

He's a Fan

Today's workout was great. After doing 45 minutes on the Elliptical machine I hopped on a treadmill for a speed run. I wanted to bang out 2 miles as fast as I could - without entirely exhausting myself, I do still have to take care of a little one. I was able to complete the 2 miles in 15:24 - not bad for a treadmill run. I always find that I run faster outside.

After D ate his lunch he requested a taste of the new Black Raspberry ice cream - I didn't tell him it was frozen yogurt. He really liked the color of it - yes my son likes pink. After his first taste he gave it the thumbs up. I knew he would be a fan - it is REALLY good.

For lunch today I made my self a toasted Arnold Sandwich thin with melted swiss cheese. The sandwich thin toast up really crisp - almost like a cracker - it was really tasty.

I also mixed cottage cheese (gotta get my protein), canned pumpkin (some veg), Kashi GoLean (grains, protein & fiber), PB (fat & protein) and cranberry apple butter (that was for a burst of flavor). This was so darn yummy! I just can't stop mixing - these bowls of goodies are so fun to eat.

I really have to do some laundry today. Being out of the house this weekend really left this mommy massive piles of dirty clothes. And there is one thing I hate to leave laying in a pile - gym clothes - yuck!!!! Oh, I just heard the dryer buzz, time to go change over a load. Then it is off to the grocery store. Monday's here agian

Where did the weekend go??? I sure do feel like those 2 days flew by. I really think that when you jam pack your weekend with activities, the days just blow by and before you know it is the start of another week. At least I had lots of fun with my little guy - he obviously enjoyed himself.

I tried something new in my morning mess - 1/2 a chopped Golden Delicious apple - my bananas are still not as ripe as I like them. Here is what appeared in the concoction today; 3/4 cup TJ's greek yogurt, 1/2 an apple, Kashi Cinnamon Harvest, Cinnamon Puffins and sunflower seed butter. I knew I couldn't go wrong with the apple and cinnamon combo - you all know my love for cinnamon. The textures in this bowl are a triple delight. This is a winner breakfast!!!

It is off to the gym this morning with my sidekick. I need to pick up a few things at the grocery store this afternoon but other than that we really don't have too much going on.

It's a Parade

Wow, another fun filled day - Halloween has already started for us. We got invited to go to a Halloween parade this afternoon - my sissy and niece walked in it.
Let me start with my morning. For breakfast I made a "mess" with yogurt, roasted/mashed acorn squash, banana, Kashi Cinnamon Harvest, Cinnamon Puffins, cranberry apple butter and PB.
I went out for a run - a nice 6 miler followed by a one mile walk. It was so warm out there this morning - 60's, yeah!!!

Lunch was a quickie so we could make it to the parade on time - last minute planning.
I started with whole wheat swiss cheesy toast.

Then I mixed up cottage cheese, pumpkin, apple sauce, TJ's High Fiber cereal, Cinnamon Puffins and Sunbutter.

The parade was great and the boys had a blast. They scored some serious loot - let's just say we don't need to go trick-or-treating, but of course we will :)

I really got into my work. For an afternoon snack I ate an apple and a Kashi Roll bar (this thing was super chewy).

My finished product - I picked the pumpkin that looked mangled and it's stem was all crazy (kind of looks like hair). It is actually oozing near the eye which makes it even more gross.

Daddy and D did a joint creation. He's sticking his tongue out at you :)

For dinner I had a Dr. Praeger's veggie burger with hummus over a bed of baby spinach.

I also mixed 1/2 cup Greek yogurt, Kashi GoLean, cranberry apple butter and sunflower seed butter (I finally got a new jar of my favorite brand - I was using the Huz jar - I like mine way more).
For dessert I had a sampling of a couple frosty treats - I mine as well take advantage of the warm weather. This flavor was awesome!!!

And mixed with this - double delish!!!! This frozen yogurt is so creamy. I am sure my little guy is going to want to dig a spoon into this stuff.
